Start by bring a large pot of water to a boil and add salt. Cook the box of jumbo shells as directed. It should make more than 21 shells but that’s okay. It’s good to have extra in case some break. Strain the shells, rinse with cold water and set aside.
Next make the cashew cheese by draining and rinsing the cashews. Transfer them to a blender or a food processor, add the lemon juice and one teaspoon of salt. Blend on high until smooth with a texture similar to ricotta cheese. You may need to use a spatula to scrape down the sides in between blending. Spoon the cashew cheese out into a large bowl and set aside.
Once the frozen spinach has defrosted, place it in a strainer. Fold a few paper towels together and use them to press on top of the spinach so that the excess water strains out of the bottom. Repeat this step until the spinach is mostly dry. Add it to the bowl with cashew cheese along with the dried herbs, minced garlic and a dash of salt & pepper then stir everything together until well-combined.
Preheat the oven to 350°F and pour 1/2 of the jar of marinara over the bottom of a 9 x 13” baking dish. Using a spoon, scoop the cashew spinach mixture into each shell and arrange them in the baking dish. Spoon the remaining marinara on top and sprinkle with panko breadcrumbs, then cover the baking dish with foil and bake in the oven for 35 minutes.
Allow to cool for a few minutes before serving. Top with fresh parsley, serve warm and enjoy!
Store leftovers in an airtight container for up to four days or freeze before baking for up to one month.

Bring a large pot of water to a boil over high heat. Add the pasta and cook until tender (7-10) minutes. Drain the pasta in a colander.
While waiting for the pasta to cook, dice the onion and mince the garlic. Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent (about 5 minutes).
Add the diced tomatoes (with juices), oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic. Stir to combine. Add the tomato paste and a ½ cup of water to the skillet and stir until the tomato paste is dissolved into the sauce.
Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the tomato sauce. Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy. Add half of the Parmesan to the skillet and whisk until it is melted in. Add the remainder of the parmesan and whisk until melted in again.
Add the fresh spinach and gently stir it into the sauce until it has wilted (3-5 minutes). Add the pasta and stir until it is well coated in the creamy tomato sauce. Taste and adjust the salt and pepper as needed. Serve warm.

MAKE THE KUNG PAO SPAGHETTI:
Whisk together soy sauce, chicken broth, sherry, chili paste, brown sugar, rice vinegar, cornstarch and sesame oil in a small mixing bowl and set aside.
Bring a large pot of water to a boil, add some salt and cook spaghetti according to package directions for al dente. Drain and toss with a drizzle of vegetable oil to keep from clumping.
In a large skillet, heat vegetable oil over MED heat and add minced garlic. Saute, stirring constantly for about 30 seconds.
Pour in reserved sauce mixture, bring to a boil, reduce heat to a simmer and let cook until slightly thickened. This will take about 2 minutes.
Toss drained pasta in the sauce.
MAKE THE KUNG PAO CHICKEN MEATBALLS:
Preheat oven to 400 degrees F. Line a baking sheet with foil and spray with cooking spray. Set aside.
To a mixing bowl, combine meatball ingredients and mix until well combined. Careful not to over mix though, otherwise the meatballs will be tough.
Scoop meat mixture into tablespoon sized balls and roll into a ball. If the meat sticks to your hands too much, wet your hands slightly with water.
Place meatballs on prepared cookie sheet and bake approximately 25 minutes, until they begin to turn golden brown and are cooked through.
To a small mixing bowl, whisk together sauce ingredients and set aside.
Once meatballs are done, remove from oven and let cool for a few minutes.
Toss meatballs in sauce.
TO SERVE:
Serve a plate of the Kung Pao spaghetti with several chicken meatballs on top. Garnish with sesame seeds, sliced green onions, and chopped peanuts.

In a large pan, on high heat, sautee garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 1 minute until garlic is fragrant. Remove sun-dried tomatoes from the pan, leaving the oil, and add chicken tenders, salted and lightly covered in paprika (for color) and cook on high heat for 1 minute on each side. Remove from heat.
Cook pasta according to package instructions. Reserve some cooked pasta water. Drain and rinse the pasta with cold water (to stop cooking).
Slice sun-dried tomatoes into smaller bits and add them back to the skillet with chicken. Add half and half and cheese to the skillet, too, and bring to a gentle boil. Immediately reduce to simmer and cook, constantly stirring, until all cheese melts and creamy sauce forms. If the sauce is too thick - don't worry - you'll be adding some cooked pasta water soon. Wash the broccoli and cut into florets. Boil in a large saucepan of salted water for 12-15 minutes until soft. Remove the broccoli when done and reserve the water to cook the pasta in.
In a large frying pan, heat the oil and fry the bacon for 3-4 minutes, then add the broccoli. Stir a little then add the milk. Cook for 15 minutes, stirring occasionally, breaking up the broccoli with the back of the spoon as you go. The sauce will end up a milky green colour and quite thick.
Cook the pasta in the saucepan and water you used for the broccoli. Before draining, reserve some pasta water, then drain and return the pasta to the pot. Add the broccoli sauce and parmesan, stirring to combine and season with salt and pepper. Spoon in enough pasta water to loosen the sauce to help it cover the pasta evenly and create a creamy texture.

Place your corn in a medium saucepan, cover with water, and bring to a boil. Boil for 2-3 minutes and then pour out into a colander to drain. Once cooled, scrape the kernels off the cob and set aside.
Place all of the ingredients for the pesto into a food processor and blend until creamy. Set aside.
Place a large skillet over medium-low heat. Once skillet heats, add in zucchini noodles, spinach and sun dried tomato pesto. Mix to combine thoroughly and stir frequently to cook. Stir frequently until noodles heat, soften and the pesto covers all noodles.
