4 Medium Sweet Potatoes
½ cups Fresh Lemon Juice
¼ cups Olive Oil
2 cloves Garlic, Minced
1 Tablespoon Dijon Mustard
1 teaspoon Dried Oregano
1 teaspoon Turmeric
½ teaspoons Salt
½ teaspoons Black Pepper
1 cup Chicken Broth
2 Boneless, Skinless Chicken Breasts
1 Large Lemon, Sliced (optional)

Preheat oven to 400ºF. Cut sweet potatoes to desired size. Arrange in a deep baking pan.
In a small mixing bowl, combine lemon juice, olive oil, garlic, mustard, oregano, turmeric, salt, pepper, and chicken broth. Whisk to combine.
Place chicken breasts over sweet potatoes and pour lemon mixture on top. Bake 55–60 minutes. If desired, after 30 minutes, arrange lemon slices over chicken and continue baking.
